Potato Gem Salad

Move over traditional potato salad. I can’t tell you how good this is. Made with Potato Gems (yes you heard me correctly) and from this point moving forward I will never make the basic potato salad again.

Prep: 5 mins | Cook time: 20 mins | Serves: 1

 

What you will need:

  • 1 Small packet of potato gems
  • A handful of Chives, chopped
  • A handful of Dill, chopped
  • A handful of Parsley, chopped
  • 1 Cucumber, roughly chopped
  • 1 Red onion, diced
  • 1 Garlic clove, crushed
  • 1 Tsp dijon mustard
  • 1 Tsp wholegrain mustard
  • 1/4 Cup greek yogurt
  • 1/4 Cup kewpie mayo
  • Salt & Pepper
  • Juice of 1 lemon

 Method

  • Preheat your oven to 200°C, line a baking tray with baking paper and lay the potato gems in a single layer and place them into the oven for 10 mins
  • Pull the potato gems out, squish them down and sprinkle some salt over the top and place them back into the oven for a further 10 mins or until crispy
  • In a large bowl, add all the remaining ingredients and stir to combine
  • Once the potato gems are nice and crispy, remove them from the oven, allow them to cool slightly and then stir them through the mixture
  • Serve and enjoy!
